In most parts of the world, fishes are deep-fried in oil. But Mangalorean believes that shallow frying on a pan protects the flavor of the fish, which often gets released in Oil when deep-fried. Also, the fish is nicely coated with a Mangalorean Red masala, then rolled in Rawa, and then fried on a pan till it's rusty golden brown.
